Hojiblanca Extra Virgin Olive Oil is healthiest oil in the world. This oil is used for cooking or eating raw on top breads or dishes similar to butter or ghee. This oil, part of the Mediterranean diet, is a traditional fat that has been a dietary staple for some of the world’s healthiest populations. There is quite a bit of research behind the health effects of olive oil. Studies show that the fatty acids and antioxidants in it have some powerful health benefits, such as a reduced risk of heart disease.
Incidentally Hojiblanca is also an olive variety, from which this olive oil is produced. The variety is commonly found in South of Spain, and derives its name from two words Hoji (Pronouced as Oki in spanish) which means Leaves and Blanca which means white. Basically Hojiblanca means white leaves, and is because the leaves of the tree on which this variety of olives are grown are whitish in colour.
In chemical terms extra virgin olive oil is described as having a free acidity, expressed as oleic acid, of not more than 0.8 grams per 100 grams and a peroxide value of less than 20 milliequivalent O2. It must be produced entirely by mechanical means without the use of any solvents, and under temperatures that will not degrade the oil (less than 86°F, 30°C).
In order for an oil to qualify as “extra virgin” the oil must also pass both an official chemical test in a laboratory and a sensory evaluation by a trained tasting panel recognized by the International Olive Council. The olive oil must be found to be free from defects while exhibiting some fruitiness. Olive oil tasters describe the "positive attributes" using the following terms:
Fruity: Having pleasant spicy fruit flavors characteristic of fresh ripe or green olives. Ripe fruit yields oils that are milder, aromatic, buttery, and floral. Green fruit yields oils that are grassy, herbaceous, bitter, and pungent. Fruitiness also varies with the variety of olive.
Bitter: Creating a mostly pleasant acrid flavor sensation on the tongue.
Pungent: Creating a peppery sensation in the mouth and throat.

In Hojiblanca, we take care of the fruit from its blossom until the harvesting of the olives in their prime ripeness; this is the first step in achieving good olives and the optimum quality of extra virgin olive oils. The combination of traditional methods of harvesting – beating with a stick and hand picking – with the most technologically advanced ones, allows us to start the elaboration process at the same time as the harvesting. In this way, our fruits enter into the production process right after being picked from the tree, an essential factor for obtaining a good extra virgin olive oil.
We undergo in-depth controls of the process and we have computer systems that allow us to keep the traceability from the packed product to the treetable olives.
